SPINACH & MUSHROOM SCONES WITH CURRIED KUMARA CAESAR MASH

SERVES 2-4

 

•8 button mushrooms, thickly sliced

•1/4 cup red wine vinegar

•generous pinch salt

•4 portions frozen spinach, defrosted

•2 large scones, halved

•Zarbo Caesar dressing, to spread and drizzle

•Toppings of choice

CURRIED KUMARA CAESAR MASH

•1/2 cup mashed cooked kumara

•2 tbsp Zarbo Caesar dressing

•1 tsp curry powder

 

1. Heat a small frying pan over medium-high heat. Add a drizzle of olive oil, then add mushrooms and salt. Sautee for 5 minutes, or until lightly browned. Add red wine vinegar and cook for a further five minutes until softened. Remove from heat.

2. Meanwhile, to make the mash, mix all ingredients in a small bowl until combined.

3. To assemble, spread each scone half with a little Zarbo Caesar Dressing. Top each half equally with spinach, then add mushrooms. Top with kumara mash, then add desired toppings and drizzle with extra Zarbo Caesar Dressing. Enjoy immediately!
